15 May Greek Lentil Salad
Salads are always in season! I make this one regularly to enjoy as a protein packed lunch or post-workout snack. Give it a try!
1 540 mL can of lentils rinsed and drained|
1/2 cup Kalamata olives chopped
1/2 cup onion chopped
1 1/2 cups grape tomatoes halved
1/2 cup green pepper chopped
1 cup cucumber diced
1/2 cup feta cheese crumbled
1/4 cup parsley chopped
1/4 cup light olive oil
1/4 cup lemon juice
1 tbsp dried oregano
In a large bowl, combine lentils, olives, onion, tomatoes, green pepper, cucumber, and feta cheese.
In a small bowl, whisk olive oil, lemon juice and oregano together.
Add dressing and parsley to lentil mixture and toss gently.
